CALUSO DOCG
White wine made from a vineyard in Piverone with a typical morainic texture: lots of sand, silt and clay (10%) with an acid matrix. Pergola training. The first vintage was 2020. It is composed of 100% Erbaluce grapes. The grapes, once harvested, are pressed remaining for about 3 hours in maceration. The must is then inoculated with neutral yeasts and kept between 14 and 18°C. Aged in steel for many months, after which it is filtered and bottled. Ageing potential: very long, because the Serra di Ivrea terroir produces very high quality musts, rich in antioxidants and with a structure more like a red than a white. Aging then continues in bottle for at least 1 year.
