CAREMA DOC VIGNEALTE
Red wine obtained from a single vineyard of about 1,800 square meters, located in Airale (hamlet of Carema) with pergola training on stone terraces. Soils are strongly sandy, rich in skeleton and low in organic matter. South, southwest exposure. The first vintage was 2020. It is composed of 90% Nebbiolo "Picotendro" and the remainder from the ripest clusters of Ner d'Ala, Neretto and Erbaluce. After preparation of the fermentation foot (3 days in advance) the grapes are harvested, destemmed and joined to the foot in a steel tank. Maceration lasts an average of 40 days (often with pomace underwine). Aging is conducted in used wood (500 or 225 liters) and for a portion in ceramic. It is not produced in all vintages, but only in those where the combination of quality and quantity is sufficient to guarantee at least 225 liters of excellent wine or, as they used to say, Extra.
